Yellow Yam Salad |

Bring water to a boil in a sauce pot, Cut string beans into three or four pieces, peel and dice carrots, blanch vegetables. Chop onions and peppers, add yam, vegetables, Grace Green Peas, Grace Mayonnaise and toss lightly. Put the salad to chill in a refrigerator for about 30 minutes. To serve: Difficulty: Preparation time: Cooking time: Yellow Yam Salad Yellow yam is one of the things that is usually credited for the excellent performance of Jamaican athletes. In Jamaica, yam is in the staple food group, providing the body with fibre, starch, sugar, potassium, protein, vitamins B1, B2, B3 and B6, folic acid, and panthothenic acid. Four ounces of cooked yam provides 80 to 100 kilocalories and four grams of fibre. There is more soluble fibre present in yam than insoluble, which makes it easy to digest and is a suitable food for young children. Yam is also considered complex carbohydrate that provides the body with lots of energy. So with our Jamaican athletes winning 12 medals, including seven gold medals, at the recently concluded IAAF World Championships in Beijing, China, a yellow yam recipe is quite fitting.
